My Tweak: "Heroin" Catfish!

Anybody that knows me gets that I'm really into Catfish.

If you're a Low Carber, I'm sure you've seen recipes for Dana Carpender's "Heroin Chicken". If you Google it, you'll find it.

I basically followed the recipe, but with a few tweaks--and I used Catfish, not Chicken.

Ingredients:
1-1/2 pounds Catfish, either fillets or nuggets
1/2 stick Butter 
11 large Tablespoon Blue Cheese Dressing 
1 canister Kraft's Parmesan Cheese
1 teaspoon Hungarian Paprika
1 Teaspoon dried Parsley
1 Teaspoon granulated Garlic
Parchment Paper

Instructions:
Pre-heat oven to 400 degrees.
Line a baking pan (lasagna type) with parchment paper
Thaw Catfish and dry very well with paper towels. Place in a large bowl.

Nuke butter for about 30 seconds until melted, and pour over fish. Add Blue Cheese dressing and, using your hands (use plastic gloves if you wish) slather mixture all over fish.

Fill a shallow pie pan with Parmesan Cheese and spices, mix well.

Dredge fish in Parmesan Cheese/spice mixture and place on parchment paper in baking pan. Be sure to press fish into the mixture to get cheese to adhere to the fish.

Place in oven on middle rack and bake at 400 degrees until browning, approximately 1/2 hour.

Let sit for about 10 minutes, then enjoy!

So-- back to blogging...

I took a rather long sabbatical after the 2008 election. Life got busy, I went on tour, and basically fell off the Low Carb Wagon. It happens-- and after a long period of beating myself up about it-- have returned to the fold.

So, now my focus is still Atkins, all things Low Carb, but also Walking Fitness. I'm using this blog to track my progress, and as always, post new recipes and Low Carb tips that I have found helpful over the years.

So, here's a truth-- at least *my* truth-- this is a Way of Eating-- a lifestyle that you have to be prepared to stick to, period. It makes a huge difference in your quality of life, overall.

Feeling good *is* the reward.
