So this recipe is so simple; it's Comfort Food on a Tired Night kinda food.
Makes 2 Servings.
Ingredients:
1 lb Ground beef, turkey or other ground meat.
1 tablespoon Chili Powder
2 tablespoons Low Carb/no Sugar Red Salsa
Salt to taste
4 large Beef or Turkey Franks, sliced about 1/2 inch thick
2 tablespoons Shredded Sharp Cheddar
2 tablespoon Sour-cream
Instructions:
Brown the hamburger (or other ground meat) in a skillet, add Chili Powder, Salsa, Salt, mix thoroughly. Let it simmer for about 5 minutes to let the flavors combine.
Take your Hot Dog slices, place them in a microwave safe bowl, and cook on HI for about 45 seconds to 1 minute. Drain, and place about 1/2 of them into a large soup bowl. Spoon the ground meat mixture over them, then top with Cheese and Sour Cream.
You're Done!

Hi there....I just found your site on the Diabetes Forum. I was diagnosed over a year ago and am on meds but never quite got my numbers down and don't know what to cook. I'm pretty picky and mostly a meat and potato or pasta girl. :( I'm excited to try out your recipes.
