So, I just made chicken to die for-- 

I was actually a little surprised that it turned out so well.

Root Beer Chicken:
2 lbs chix drumsticks
1 can Hansen's Diet Root Beer
Chili Powder 2 or so tbsp
Granulated Garlic 2 or so tbsp
olive oil, 1/2 cup
freshly ground salt to taste

Instructions:
Put chix into 1 gallon baggie
Mix root beer, garlic, and oil and pour over Chix.

Seal the bag, getting out as much air as you can, then let it sit in the fridge for a couple of hours, turning whenever you think about it.

Pre-heat the oven to 400 degrees. Place chix in a baking pan. Season both sides well with the Chili powder and the salt.

Bake for 1 hour. Enjoy!!!!

Makes a great snack.

*Note-- this would also be great with Cajun Seasoning. The leftover juices work well as a dipping sauce. You could use the same recipe with thighs, either skin on, or boneless , skinless-- and chop up the meat, add a couple of tablespoons of the sauce to it and serve over Faux-Rice. If you add a little chopped chix liver, andouille sausage, green and red bell pepper to it, you've got Cajun "Dirty Faux-Rice.) I'm thinking a little baby shrimp might work well with this, as well. I'll let y'all know when I try it.

If you're eating low carb, however, your objective isn't to be in ketosis, you can now get in shape. This is particularly evident if the majority of the carbs you're eating are vegetables.
